Now for my post about yeast

Today I brewed beer and cider and spiced cider. The spice cider was because I had to take some cider wort out of the fermenter to water it down, so we weren't drinking 9% alcohol cider at Festival and I figured it would be interesting to try.
The other yeast based activity was firing my oven for the first time (it works!) and cooking bread.
After firing for two hours, I got enough heat to cook bread for about an hour and a half. With the size of my oven, I can probably cook 6 small loaves in that time.
Last night, I experimented with cooking small loaves and opening the oven door a lot. The first 4 loaves were yummy and browned, the last two were larger ('cos I got more daring as I went on) and completely cooked, but only brown on the bottom. The base of my oven puts out more heat than the walls.
Tonight I fired it again, because I wanted to see what happened if I put a large loaf in and left the door closed. At first the oven was too hot - flour on the floor was going black, so I quickly put together some pizza fixings. Unfortunately, in the time it took to put pizzas together, the oven cooled down enough that they didn't cook quickly enough. They had a yummy bottom crust though. After pizza cooking, I put the large loaf in the oven and it cooked beautifully. It wasn't as large as it should have been though - I stole dough for pizza.
There's still heat in the oven, so I've taken some of the peaches from the box-of-peaches-for-$2, cut them in half and put them in the oven on the rack I "adjusted" to fit inside my very small oven. Either we'll have roast peach, or dried peach. I'll check soon.
On Monday, I'll make the bread dough in the morning so it tastes better and I'll make at least two loaves worth. I'll also have the pizza's ready to put in as soon as I've adjusted the fire. Perhaps I'd better make 3 loaves worth of dough. I think I have to buy some more flour.

Date: 2007-03-11 01:20 am (UTC)This oven was built so that I could lift it onto a platform and put it on a mobile cart. Since that plan, we've built two ovens and both took only an afternoon to build.
I think we'll just "modify" the oven we already have.
